Ingredients
- 5 pounds of washed red potatoes, chopped (preferably organic)
- 1 sleeve of celery, diced (preferably organic)
- 4-5 low-sodium dill pickles, chopped
- 1/4 to 1/2 c. Dijon mustard (to taste)
- 1/4 to 1/2 c. Vegenaise (to taste)
- Red wine vinegar, splash
- 1 teaspoon celery seed
Instructions
- Put potatoes in large pot of boiling water and simmer until soft but not mushy (approx. 10 mins)
- Remove from heat immediately, empty water, and cool by running under cold water
- Set aside in large serving bowl
- To potatoes, add all other ingredients
- When adding dijon mustard and Vegenaise, start with small amounts, stir thoroughly, and taste
- Add more as needed to achieve desired flavor
Notes
