Ingredients
- 2 packages of diced seitan
- 1 package of California blend, frozen vegetables or chopped fresh vegetables including broccoli, carrots, onions, and cauliflower
- 1 package of frozen, organic, non-GMO corn
- 3 garlic cloves, diced
- 1 can cannellini or white pinto beans with juice
- 1 tbsp dried oregano
- 1 tbsp dried rosemary
Instructions
- Toss all ingredients in a large saucepan, bring to high heat, then simmer for 20 minutes or until vegetables are cooked.
- Season with oregano and rosemary
- Serve over a bed of quinoa or millet
- Drizzle flax seed oil on top

- Vegan seitan with millet or quinoa; great for dinner--kids love it!
